  The second oldest site I know about and perhaps the first one to use themes.
• Lilac Rose
  A really nice site done by malevolent design and not just because of the pictures - you don’t very often find sites that really validate!

  Another one I found myself.
• The Essential Breaks
  Newest addition with lots of activity in the forums!
• Ry
  A site making extensive use of ZenMagick's Ajax features and a very nice design too!
  Disclosure: mixedmatter was involved in developing the site and as a result quite a few ZenMagick bugs got fixed!
• paperium
  Another Ajax based cart that looks really cool - Inspiration of some of the Ajax code now in ZenMagick
• Dahara Dreaming
  A site that looked like the default theme for some time and then blossomed into a nice handcraft store

  The first multi language site I know of and well done.
• Grandma's treasures
  So far the store sticking closest to the default theme.
• The Green Apple
  Great looking site! And the best is, Matt has promised to file bugs for all the problems he ran into:)
• Narayan Exim
  A fresh crisp design from India utilizing jQuery in some new and good looking ways
• CheerKids
  A no-frills store using the zm_multi_qty plugin.
• Silverea Jewelry
  Bilingual store selling jewelry - nice work with the images on product pages!
• joyeria de plata
  Another bilingual store. Not sure what they are selling, but some large categories.
• Divinery
  Another wine store. Lots of Ajax, fun to play around with. Looking at some of the code this seems to be a sibling of paperium
• Fashion Jeans
  Another fashion site, also with some fancy Ajax...

  Who would have thought these are still sold!

  Cool site with a nice Ajax'y Express Checkout!
• McHealth
  Despite the name a german site with a quite small catalog and a very simple two column layout
• vivilover A Japanese site selling beauty products AFAIKS
• Otis Jaxon Silver Jewellery
  A very nicely done store, unfortunately you need to register in order to see more.

Demo Sites

• ZenMagick Demo Site
  The ZenMagick demo site running the demo theme which includes some fancy stuff that hasn't made it into the default theme.

There are also a number of test sites around that do not appear to be of any use right now. I also know about a few more that are currently under development and not live yet.
